How To: Make Betty's party cocktail meatballs

Make Betty's party cocktail meatballs

Betty makes cocktail meatballs which are served right out of the crock pot.

Line a broiler pan with tinfoil.

For the meatballs you will need in a large bowl. In the bowl add 1 beaten egg, 1 lb. ground beef, 1 tsp. salt, and 2-3 tbs. plain ground bread crumbs. Chop the meat up with a spoon and use an electric mixer to blend ingredients together. Put the meat mixture on a chopping board or on the counter. Take some of the meat mixture and roll into a ball. The ball should be less than 1 inch. Place the balls on the broiler pan and put in an oven at temperature of 400 degrees but put on broil not bake. The meatballs will cook from the top. When meatballs are done, transfer to the crock pot. If they are not completely cooked, that is okay because they will continue to cook in the crock pot.

To make the sauce put 2 tbs. butter into a wok type skillet. Add 1C finely chopped onions and 1C finely chopped green peppers. Sauté on the stove until soft. Remove from the stove and add a can of tomato soup to the onions and peppers. Add 2 tbs. brown sugar, 4 tsp. Worcestershire sauce, 1 tbs. mustard and 1 tbs. white vinegar. Stir sauce ingredients.

Add the sauce over the meatballs in the crock pot. Turn the crock pot on high and cook 2 hours with the lid on. Leave in the crock pot to serve with party picks. Meatballs will remain warm. Crackers can be served with the meatballs.
