Make lamb shanks

If you're looking for a new recipe to try, why not try making some lamb shanks. The instructions are easy to follow and you'll be sure to wow your guests. Ingredients: 3 tbsp olive oil, 2, 4 or 6 lamb shanks, 2 stalks celery, 2 whole carrots, 1 large onion, 1.5 cups port wine, 1 cup red wine, 2 cups chicken broth, 2 cups beef broth, 5 garlic cloves, 28 oz can of tomatoes, 1 sprig rosemary, 4 or 5 sprigs thyme. Instructions: Trim the fat and the silver skin off the lamb shanks (optional). Salt and pepper the lamb shanks. Add the olive oil to a hot pan. Place the lamb shanks into the pan to brown for about 5 minutes per side. Take the lamb shanks out. To the pot add: coarsely cut onion, carrots and celery, 5 cloves of garlic. Sauté the vegetables for about 10 minutes. Add red wine and port wine to pan, cook to reduce wine by half. Add a can of tomatoes, beef broth, chicken stock, thyme and rosemary and lamb shanks. Bring the pot back to a boil with a lid on it. Once at a boil, put the pot into the oven for 2 hours. After 2 hours, take the lamb shanks out of the pot (they will be tender). Cover shanks with aluminum foil and place back in oven to stay warm. Strain the vegetables through a strainer into another pot. Reduce the juice to make a gravy for mashed potatoes or other side. Serve with bread. This delicious meal would be great to serve to your sweetheart on Valentine's Day or to guests for a party.
