Add 2 and a half cups of flour, a teaspoon of salt, half a teaspoon of sugar to a bowl. Remove broth from fridge skim off 3 tablespoons of fat, and add the fat to the bowl of flour and a couple of cups of broth and mix. Add more flour or broth until the mixture forms a dough ball. Roll out the dough into a thin sheet, then cut into squares or rectangles. Allow squares to dry for a few hours, turning if required. Boil broth, adding salt and pepper. Add dumpling squares to broth, trying to keep them separate. Turn down the heat and allow the dumplings to simmer for 30 minutes. Add the chicken to the broth and dumplings.
