First we need to place some rosemary leaves and some whole garlic (around four) on an oven tray, then place the lamb meat over the top rosemary and garlic, the lamb meat should be cut along all over its surface, this is to allow the whole meat to get cooked evenly, then season it by adding salt and pepper, then add olive oil over it, we can add more olive oil so that the stick over the surface of lamb meat. Then put the tray in the oven and set the temperature to 190 degrees and cook them for 2 hours, if we want to make the meat more tender then we can lower the temperature to 170 degrees and cook them for 3 to 4 hours. Monitor the oven for every half an hour, after one hour take the meat from the oven and flip them to the other side, now we can keep partially boiled potatoes in the oven tray along with the lamb so that we can also cook some roasted potatoes along with the lamb, which will some nice flavor. Simultaneously prepare some garlic paste. After one and a half hour again turn the meat to the other side by taking it out from the oven, also turn the potatoes to the other side and collect the juice from the lamb that is left in the oven tray, this juice can be added to the garlic paste, after one hour and forty five minutes take the tray out from the oven and add the garlic paste mixed with lamb juice evenly over the lamb, and cook them for another 45 minutes. Now take the tray from the oven and the lamb and the potatoes are roasted now, then collect the left over juice from the oven tray which is the mixture of rosemary, garlic and ginger, pour them over the lamb, which gives the lamb a very good flavor.
