That "hard bone meat" are what they call rib tips, great to snack on while you wait for the slabs to finish because they take 1/2 the time. They have a lot of cartilage but the meat is very flavorful. many people buy just the tips and some chew up the cartilage with the meat.

When it's removed you now have St. Louis style ribs.
